Noma and Novonesis aim to elevate flavour to new heights

Noma, one of the world’s most renowned restaurants, is joining forces with Novonesis, the global leader in biosolutions. Together, they aim to take flavour to the next level.

The partnership between Noma and Novonesis sits at the intersection of biology, science, gastronomy and food innovation. Its goal is to inspire both consumers and producers to rethink what food can be. The collaboration includes, among other things, the development of new products under the Noma Projects line.

  • We want to inspire the world to eat in new ways, and I believe flavour is the key to change. Flavour is our superpower at Noma, and together with Novonesis we can use our imagination and expertise to create new, extraordinary taste experiences and bring them into people’s homes across the world, says René Redzepi, founder and co-owner of Noma, in a press release.

Noma and Novonesis unite two strong global competencies in fermentation. Novonesis has over 100 years of experience in fermentation technology and collaborates with some of the world’s largest food companies, while Noma has long used fermentation to explore and create entirely new flavour universes.

Both Noma and Novonesis are driven by strong local roots, with origin, ingredients and community as core values.

By working with Noma, we can take our knowledge of flavour and texture to the next level and create foods that are healthier, tastier and better for the planet, says Andrew Taylor, Executive Vice President for Food & Beverage Biosolutions at Novonesis.

Together, the partners will explore new flavours, textures and nutritional profiles, and find smarter ways to make use of local raw materials – for the benefit of both consumers and the environment. The first jointly developed products will be unveiled at Gulfood Manufacturing in Dubai on 4–6 November.
