Thise Dairy puts beer and cheese on the agenda at FoodTech

Thise Dairy is contributing award-winning cheeses to a combined beer and cheese tasting at FoodTech in Herning this October. According to the dairy, the interplay between the two products holds significant potential – and points towards greater collaboration across the dairy and brewing industries.

Thise Dairy, a Danish organic dairy cooperative, is helping to shine a light on the relationship between cheese and beer when FoodTech brings the food industry together at MCH Messecenter Herning in October. The dairy is contributing cheeses to a combined tasting as part of the fair’s brewing programme, World of Beer.

The tasting has been developed by Master Brewer Anders Kissmeyer, who has put together pairings of Danish beers and cheeses in close collaboration with exhibitors. Participants can either join a guided masterclass or experience selected combinations in a more informal setting.

Richness meets bitterness
For Ib Nørgaard Bentley Madsen, Cheese Specialist at Thise Dairy, the focus is on finding combinations where the two products enhance one another.

“We have worked systematically to identify the combinations where cheese and beer enhance one another, creating a truly harmonious tasting experience. At the same time, participants will embark on a journey through Danish cheese culture, exploring a wide selection of cheeses from different regions and traditions,” he says in a press release from FoodTech .

Ib Nørgaard Bentley Madsen notes that cheese and beer complement each other in terms of flavour: cheese contributes richness, saltiness and complex notes, while beer adds bitterness, body and character.

“Many people still associate cheese primarily with wine, but developments within the Danish brewing industry have made beer an equally exciting accompaniment. In fact, I believe we will see much greater collaboration between the dairy and brewing industries in the future because the potential is so significant,” says Ib Nørgaard Bentley Madsen.

FoodTech takes place from 27–29 October 2026 at MCH Messecenter Herning.
